Corporate position requiring regular travel to startup bakery facilities on a national level.  Responsibilities including sanitation pre-op assessment for gantt chart creation.  Guiding newly hired sanitation managers and their crews toward achieving startup deadlines while educating them on leading industry cleaning practices and safety protocols.   Post-op food safety inspections as well as sanitation program creation guidance.  My home office is located at the closed plant in Ogden where I oversee the assets and facility maintenance.

 

        Negotiated the sale of scrap steel assets at the Ogden plant acquiring $13k above the original highest bid, ultimately netting 103k profit

        Made the decision to auction fleet equipment at the Ogden plant ultimately netting 29k profit, bringing in 19k above other bulk purchase offers

Directed plant shutdown operations prior to Flowers Foods acquisition of the facility.  Retained at the plant for the full duration leading up to the transfer of ownership (only employee retained out of 250+).  Responsible for the 24/7 operation of the 200K sq. ft. facility and it’s three product lines directing all food safety, sanitation and receiving activities.  Performed the role of HACCP Coordinator and Food Defense Coordinator with responsibility for 25+ employees including one salaried assistant and four supervisors.  Oversaw quality assurance activities until August 2009 when the company created a Quality Manager position to assist in meeting BRC/GFSI requirements.

        Annual cost savings accomplishments:  sanitation manpower 147k, trash compactor project 53k (projected), cleaning chemical usage 18k, pest control program 5k

        Increased cash flow on monthly P&L 20k by bringing 5S organization to the general supply storage room

        Reduced plant wastewater BODs, FOGs and TSS 75% through various waste flow control measures

        Plant leader at driving & auditing food safety standards & am an expert at identifying food safety issues consecutively achieving ‘SUPERIOR’ & ‘A’ ratings (top 20% in the industry) during BRC/GFSI & AIB audits
